Tomato Sambal Chicken
This versatile little number can be as fiery or as tame as you like, it's super easy to make and can be enjoyed so many different ways - with rice.. with pasta.. on a pizza.. in a pitta?! Give it a go and see if it tickles your fancy

Serves 4 people
Ingredients
320g Chicken (we used breast)
2 tsp tumeric powder
1 pinch salt
2 tbsp sunflower oil
1 small onion
3 cloves garlic
1 x 400g tin chopped tomatoes
1 tbsp sugar
1 cube chicken stock
2 heaped tsp The Sambal
more salt to taste
Fresh coriander for garnish
Method
Marinate
Cut the chicken into strips and rub all over with the tumeric and pinch of salt. You may want to wear gloves for this part or use 2 spoons - Tumeric will stain you and everything it touches!
Leave the chicken to marinate for at least 30 minutes
Fry
Slice the onion into strips and crush the garlic
Heat up the oil in a deep frying pan or saucepan
Add the onion, garlic and chicken to the oil and fry for 5-7 minutes
The chicken should be cooked on the outside and the onions nice and sweaty by now
Add Some Sauce
Add the tin tomatoes, sambal, sugar and stock cube to your pan
Mix until everything is combined and then turn down to a medium-low heat and simmer for 20 minutes
Serve up!
Add some extra salt or sambal to taste
Garnish with a sprig of fresh coriander and eat with steamed basmati rice ... or pasta!
